Difference 1: The mopping systems work differently.
The S7 MaxV Ultra’s mop is always under the robot. When carpet is detected, the mop is retracted upwards and into the robot. However, this retraction is only enough to avoid getting low pile carpet wet. If you have middle to high pile carpet, it won’t be enough to prevent them from getting wet.
When a hard surface such as tile or hardwood is detected, the mop is extended and vibrates left and right 3,000 times per minute to really give the floor a good clean.
The Combo j7+ is sits under the robot while it mops. But when carpet is detected, the metal arms on the robot lift the mopping pad up and over the top of the vacuum, where it sits until the robot moves off the carpeted area. The Combo j7+’s mop is not as powerful as the Roborock’s in that it does not vibrate, but the metal arms on the Roomba do exert constant downward pressure to give the floor a good wiping down.
The Roborock is better in that its mop “scrubs” left to right to really give the floor a good clean.
The Combo J7+ is better in that there is no risk of getting your carpet wet no matter how soft or high high-pile it is.

The S7 MaxV Ultra’s Empty Wash Fill Dock doesn’t only recharge your robot vacuum and give it a place to rest.
It also automatically empties the robot’s dustbin, washes the mop, and refills the robot’s water tank every time it docks.
It means you don’t need to wash the mopping pad after every cleaning session, which saves a ton of time. You do, however, have to keep an eye on the dirty water tank, since sitting dirty water does start to smell pretty quickly.
